Glass bottles offer terrific thermal insulation, which helps to make olive oil less susceptible to fluctuations in temperature. Dark bottles also shield olive oil from UV rays, they can be recycled and are considered superior packing material. And well-fitting spouts are preferred to help control pouring.

The best way to store olive oils and balsamic vinegars is to always store them in their original dark bottle until ready to use. Keep them in a cool, dark place (such as a pantry or cabinet) to slow down the oxidation process. The best room temperature is around 60 degrees or so. Don’t store them on the counter, near a stove and never in the refrigerator.
